- 1 cup raw milk (coconut milk tonic, or water, I actually used water, which won’t make as rich of a cake, but it still turned out great!)
- 2 cups whole wheat pastry flour
- 1 1/2 cups maple sugar (whole cane sugar, such as rapadura, or palm/ coconut sugar)
- 2 tsp. vanilla extract
- 1 cup coconut oil (melted)
- 1 tsp. salt
- 1 1/2 tsp. baking soda
- 3/4 cup cocoa powder (not Dutch processed)
- 1 tsp. instant espresso powder (optional)
- 2 large eggs

It’s a perfect cake. We love it so much. I’ve shared it with many friends and now it there go to chocolate cake recipe as well.
