- 40 saltine crackers (I used about 32 crackers)
- 1 cup unsalted butter (2 sticks)
- 1 cup brown sugar (packed, I used half light and half dark because that’s what I had)
- 1/2 tsp. vanilla extract
- 2 cups semi sweet chocolate chips (I used one 12-ounce bag of TJ’s semi sweet morsels, also see optional note below)

Everyone always loves this and the ingredients are usually all items in the pantry. Easy recipe to follow. I cover the jelly roll pan with foil, then parchment paper, and spray it. I cool this on the counter before putting it in the fridge.

This is an all time favorite of ours to make. I use no salt matzo instead of saltines. Just fit them onto cookie sheet by cutting to fit without over lapping. I spray Pam on cookie sheet, put tin foil onto the sprayed tray, then spray the tin foil with Pam. Clean up is a breeze.
Now for some variety...after chocolate melts and you smooth out, sprinkle with different toppings like : Heath chips, crushed candy cane, marshmallows, peanuts, and extra chocolate chips (Rocky Road), crushed pretzels, ect.
Yes, this is definitely Christmas crack because it really is addicting!!!!.

I made this to give to the ladies for our annual GNO Christmas get together and everyone loved it. I also gave these as a couple of hostess gifts and they loved it also!

I have made this recipe many times, with chopped walnuts on top, and it comes out great every time. Be aware that saltine crackers seem to be shrinking in size as the years go by, so take the count on how many you need, with a grain of salt (pun intended) -- you may need more. The vegan alternative should probably link to a square or rectangular cracker, rather than a round one, so they fit together well in the pan; otherwise, I guess you would wind up with pockets of just buttery stuff and that might affect how well chocolate could be spread around on top. Also, you would need to use vegan chocolate chips.

If you want some lovin’, make this! I’ve made it several times and it’s always a hit! Definitely use foil and cooking spray. After adding chocolate chips return to the oven for 2 minutes to soften a bit. I added heath crumbles as a topping this last batch. Oh, and cool it in the fridge or freezer for about an hour 😁
