- 3 large eggs (+ 2 large egg yolks, at room temperature)
- 1 1/2 cups sour cream (full fat)
- 1/3 cup whole milk
- 3/4 cup vegetable oil (you may also sub in melted coconut oil)
- 2 Tbsp. vanilla extract
- 1 1/2 cups hot water
- 2 1/2 cups raspberries (fresh or frozen, if using frozen, do not thaw first)
- 8 oz. cream cheese (full fat, very soft)
- 1 cup unsalted butter (2 sticks or 8 ounces, very soft)
- 4 1/2 cups confectioners’ sugar (sifted)
- 3/4 cup unsweetened cocoa powder (sifted)
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 3 Tbsp. heavy cream (more if needed)
- 2 Tbsp. raspberry preserves (seedless)
- 1/2 cup raspberry preserves
