  • 1/3 cup milk (I used unsweetened almond milk)
  • 1 teaspoon vanilla
  • 1/2 cup coconut oil (melted, or sub for butter, or another healthy oil)
  • 1/3 cup unsweetened applesauce

    The taste is very much like chocolate cake. However, Its very easy to taste the quinoa in it too. If ur not use to quinoa it maybe off putting. The muffins consistency was sorta mushy in the middle and the quinoa gravitates to the bottom a bit. I would definitely recommend using the liners. I baked them for 5-8 mins longer. I'm thinking I may have put to much batter in the tins. Regular size muffin tin. For a healthy snack / dessert recipe it's one if the better chocolate ones. I did have to put whip cream on them for the kids to help hide the quinoa flavor. They liked them and for me that is why I'm rating it as a 4 star. Kids willingly eating something with quinoa is awesome!
