- 1 cup non dairy milk (I used So Delicious Coconut Milk or water with 2T full fat coconut milk)
- 1/2 cup pumpkin puree
- 4 Tbsp. honey (maple syrup, or replace up to half with equivalent in stevia liquid)
- 3 Tbsp. coconut oil (melted, or avocado oil)
- 1 tsp. vanilla extract
- 3/4 cup brown rice flour
- 1/2 cup tapioca flour
- 1/4 cup teff flour (my favorite gluten free flour!!)
- 3 Tbsp. unsweetened cocoa powder
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1 tsp. canela (optional)
- 1 lb. strawberries (berries, or raspberries preferable, frozen or fresh)
- 4 Tbsp. honey (or maple syrup)
- 1/4 tsp. maple syrup (and reduced the, to 2T)
