- 1/2 cup pumpkin puree
- 2 tsp. vanilla extract
- 1/3 cup brewed espresso (or very strong coffee)
- 1/2 cup vegan chocolate chips

- 1/2 cup coconut cream (canned unsweetened)
- 6 oz. vegan chocolate chips

These turned out really well. I am not on a vegan or gluten-free diet, but I wanted to find some recipes for my friends/family who are, and this one turned out to be a great one. The brownies are still sweet but not quite as sweet as traditional brownies, but everyone said they turned out great. The recipe didn't say to add any xanthan gum, but I did, and it helped so the brownies weren't super dense, so I would recommend adding some.
