These were so good! I'm not one for GF stuff but I was looking for an easy recipe for a teacher appreciation cookie, so I tried these out. Of course I had to taste test and these were amazing. They really spread in my oven and had I realized that, I would have probably put a tablespoon worth of batter per cookie rather than my 1" scoop, but I'll take these either way!
