  • 1/4 cup light buttery spread
  • 1/3 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 2 eggs (at room temperature)
  • 1/2 cup applesauce
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup self rising flour
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/3 cup powdered sugar
  • 1/2 cup cream cheese (light spreadable)
  • 1 teaspoon grated orange peel (finely)

    Directions

    1. Preheat the oven to 350°F. Line a 12-cup muffin pan with paper liners. Beat buttery spread, brown sugar and vanilla extract in a large bowl with an electric mixer on medium speed until just combined. Add eggs, 1 at a time, beating well after each addition. Stir in applesauce until combined.
    2. Sift 1/3 cup cocoa powder, flour and baking soda over batter; stir until combined. Stir in buttermilk. Spoon into muffin cups.
    3. Bake 12-15 mins or until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
    4. For the frosting, sift 2 tbsp cocoa powder and powdered sugar into a bowl. Stir in cream cheese and orange peel until well blended. Frost cooled cupcakes.
