- 80 grams egg white (I use aged leftover egg whites)
- Less than 1/16 tsp. meringue powder (skip it if you don't purchase it)
- 1 pinch salt
- 60 grams caster sugar
- 140 grams icing sugar
- 80 grams almond flour
- 25 Tbsp. coffee (instant granule, mine has strong coffee flavor, reduce if you want less coffee flavor.)
- food color (Black gel, I use few drops only, optional)
- cacao powder (for sprinkle over the shells)
- 100 mL heavy cream
- 100 grams cooking chocolate (dark, finely chopped/ shredded)
- 3 tsp. instant coffee (granule, you can add or reduce 1 tsp for less or more coffee flavor)
- 75 grams unsalted butter
