- 1/2 cup cocoa powder (Dutch-style, I *love* Pernigotti, from Williams Sonoma)
- 4 tsp. espresso powder (1 tablespoon + 1 teaspoon)
- 1 pinch salt
- 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 4 large eggs (room temperature)
- 1 1/3 cups sugar (if you don’t like your cookies as sweet, you can use closer to 1 cup)
- 6 oz. dark chocolate (or semi-sweet, chopped into bits)
- 1 cup cherries (dried sweetened, measured then chopped roughly)
