- 1 tsp. baking powder
- 1 tsp. kosher salt
- 1 cup buttermilk
- 1/2 cup vegetable oil (I have used regular vegetable oil and avocado oil)
- 2 eggs (at room temperature)
- 1 tsp. vanilla extract
- 1 cup brewed coffee (hot, freshly, I used hot water + a Starbucks Via packet!)

Could not be better. You can ascribe every cake-related superlative to this cake. Fluffy? Check. Sweet? Check. Savory? Check. I lathered the cake in the Chocolate Buttercream that is linked to in this recipe. It is unconscionable do use anything else. That buttercream was like the platinum hood ornament on the Rolls Royce of cakes.

Amazing texture - I've also made it with aquafaber instead of egg (1-2 tbsp per egg), almond milk with cider vinegar instead of buttermilk, and reduced the sugar, and still comes out tasting lovely. I did find that it has a tendency to crack and is very fragile whatever variation, so perhaps I'd reduce the liquid content a little if I wanted to make an easier to handle cake.
