Description
Spongy and moist, this chocolate cake has a rich cocoa flavor and a subtle hint of coffee throughout. This cake is made with a combination of butter and yogurt for a cake that has absolutely no hint of dryness. Baked for 50 minutes in a cake mold of your choosing, this decadently rich chocolate cake is then covered in a white chocolate or milk chocolate icing. Garnish with fresh raspberries.

- 375 grams flour
- 1 tsp. baking powder
- 500 grams sugar
- 1 tsp. vanilla extract (or vanilla pod seeds)
- 75 grams cocoa powder
- 2 tsp. baking soda (sieved)
- 200 grams butter (soft)
- 250 mL yogurt
- 3 large eggs
- 250 mL coffee (boiling hot)

Directions
- Preheat the oven to 160C.
- Grease a 2.36 liter mold.
- Beat together all the ingredients until smooth using a food processor or by hand. Ensure the coffee is piping hot so as to react with the soda and melt the butter.
