Description

A mere tablespoon of extra-virgin olive oil is all that's called for in this Italian-style Bundt cake, which is kept moist and tender by the addition of four whole eggs and the heavy cream in the batter. Cocoa powder--preferably bittersweet--gives the cake intense chocolate flavor, and is used to dust the greased cake pan before the batter is poured in, to keep it from sticking and help with easy unmolding.

  • 2 teaspoons baking powder
