Chocolate Almond Chiffon Cake with Amaretto Cream

We modernized the classic and elegant chiffon cake by adding cocoa powder, almond extract, and finishing it with a cocoa amaretto whipped cream and crunchy cocoa nibs. The result is a delicate and moist crumb that has the height and lightness of angel food cake, but the richness of pound cake. To ensure the chiffon cake is light and airy, take care to make sure the eggs and sugar are whipped until the batter turns pale yellow and forms thick ribbons. It takes time, but the end result will yield a cake thats moist, tender, and flavorful. Uses KitchenAid® Hand Mixer.
Ingredients
- 3 Tbsp. hot water
- 3/4 tsp. instant espresso powder
- 5 Tbsp. unsalted butter (melted)
- 1 1/2 cups cake flour
- 1/3 cup Dutch process cocoa powder (unsweetened)
- 2 tsp. baking powder
- 1/2 tsp. fine sea salt
- 6 large eggs (room temperature)
- 1 1/2 cups granulated sugar
- 1 Tbsp. pure vanilla extract
- 1/2 tsp. almond extract
- 2/3 cup bittersweet chocolate (grated)
- 2 cups heavy whipping cream (cold)
- 1/4 cup amaretto (optional)
- 2 Tbsp. cocoa powder (sifted)
- 2 Tbsp. confectioners’ sugar
- 1/3 cup cocoa nibs (for garnish, optional)
Directions
- Special Equipment: One 9.5-in/26-cm angel food cake pan (tube pan); spatula; box grater, sifter.
- Position an oven rack in the center of the oven and preheat the oven to 325ºF/160ºC/gas 3.
- For the chocolate almond chiffon cake: In a heat proof 1-cup measurer, add the hot water, and instant espresso powder. Stir to combine. Add the melted butter, stir, and set aside. Keep the mixture warm.
