I tried three variations. My favorite was substituting dark brown sugar for the white sugar, cooking it just to the soft ball stage (about 250 degrees F) before adding the baking soda. Instead of a sponge, it turned into caramels. I did have to store them in the freezer though to keep their shape.

Glad I used a candy thermometer, it took me more like 12-15 minutes to get to 150c. Maple honey flavor is delicious.
