- 1 cup mayonnaise (Hellmann's® or Best Foods® Real)
- 2 Tbsp. lime juice
- 2 Tbsp. chopped fresh cilantro (optional)
- 2 cloves garlic (finely chopped)
- 1 tsp. ground chipotle chile pepper (or 1 chipotle pepper in adobo sauce, finely chopped)
- 2 lb. skinless chicken thighs (boneless, or breasts, cubed)

Directions
- Combine all ingredients except chicken in medium bowl; reserve 1/2 cup mayonnaise mixture.
- Thread chicken on skewers*, then brush with remaining mayonnaise mixture.
- Grill or broil chicken, turning once, 8 minutes or until chicken is thoroughly cooked. Serve chicken skewers with reserved mayonnaise mixture.
