- 1/2 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 4 Tbsp. olive oil
- 1 sweet potato (medium to large, chopped into bite sized pieces)
- 3 cloves garlic (thinly sliced)
- 1 yellow onion (medium sized, chopped)
- 1 bell pepper (I used half of a red and half of a yellow, chopped)
- 1 lb. ground beef
- 2 Tbsp. flour (I used rice flour, but you can use all-purpose)
- 28 oz. diced tomatoes (canned)
- 30 oz. black beans (drained and rinsed)
- 3 chipotle peppers in adobo sauce
- 1 tsp. sugar
- 1 lime (about 2 tablespoons)
- 1/2 cup water
