- 1/2 tsp. coconut sugar (or other sugar)

- 3 beets (medium, scrubbed)
- 1 chipotle pepper in adobo sauce (finely chopped)
- 1 tsp. ground coriander seed
- 1/4 tsp. cumin seed (ground)
- 3 Tbsp. lime juice (freshly squeezed)
- 1/2 Tbsp. coconut sugar (or brown sugar)
- 2 Tbsp. adobo sauce (additional, to spice preference)
