- 2 Tbsp. olive oil
- 1/2 sweet onion (a small)
- 1 clove garlic (minced or grated)
- 1 sweet potato (large, chopped, peel if desired)

- 1 1/2 cups cooked quinoa (I used red quinoa)
- 2 tsp. chili powder
- 2 chipotle chilies (canned, minced)
- 1 Tbsp. chipotle in adobo (from the chipotle chili can)
- 1 tsp. smoked paprika
- 1 tsp. cumin
- 1 tsp. brown sugar
- 1 tsp. cayenne (or to your taste)
- 1 cup black beans (cooked, if using canned drain and rinse them)
- 1 lime juiced
- 1 bunch cilantro
- 12 corn tortillas (tortillas, warmed or hard shell tacos, personally my family prefers hards shell, but all of them are good!, warmed)
- 1 avocado (sliced or diced, for topping)
- 1 cup shredded sharp cheddar cheese (for topping)
- cotija cheese (crumbled, for topping)
- 12 oz. fresh cranberries
- 1/4 cup brown sugar
- 1 chipotle chili (canned, chopped)
- 1 lime zested (+ juiced)
- 1 clove garlic (minced or grated)
- 1 jalapeno (chopped and seed removed if desired)

Very tasty. Adapted to bring down the calories, served without tacos, cheese, avocado, but more sweet potato (for 4 servings used 500 g potato and 1 can black beans and 100 g quinoa). Only used brown sugar (8 g) in cranberries (125 g), not in potatoes.
