- 12 flour (x 6 inch tortillas, corn-, mix Grilled)
- lime (for garnish, optional)
- marinade (Chipotle, Ingredients:)
- 3 large garlic cloves
- 3 whole chipotles
- 1 Tbsp. adobo sauce (from the can of chipotles)
- 4 Tbsp. olive oil
- 1 lime
- 1 Tbsp. lime juice
- 1 tsp. ground coriander
- 1 Tbsp. ground cumin
- 3/4 tsp. kosher salt (more to taste)
- cracked black pepper
- peach salsa (Ingredients:)
- 2 1/2 cups peaches (diced -just ripe, about 3-4 peaches)
- 1/4 cup diced red onion (finely)
- 2 tsp. habanero (minced, or use jalapeño for less spicy)
- 1/2 cup chopped cilantro (tender stems ok)
- 1/8 cup fresh lime juice (or more to taste)
- 1/8 tsp. kosher salt (or more to taste)
