- 2 cups rice
- 4 cups broth
- 1 Tbsp. butter
- 1/2 onion (large, about 1 cup diced)
- 1/2 tsp. kosher salt
- 1 chipotle pepper in adobo sauce (minced fine)
- 28 oz. diced tomatoes
- 1 1/2 Tbsp. spice mix (Mexican, taco seasoning can be substituted)
