- 2 Tbsp. olive oil (divided)
- 1 lb. chicken breasts (or thighs, cut into 1 inch pieces)
- 1 onion (medium, diced)
- 2 cloves garlic (minced)
- 14.5 oz. fire roasted diced tomatoes (undrained)
- 2 cups cooked rice (you can use either brown or white rice)
- 1 cup frozen corn (no need to thaw)
- 14.5 oz. black beans (drained and rinsed)
- 1 tsp. cumin
- 1/2 tsp. chili powder
- 1 Tbsp. lime juice
- 2 whole peppers (chipotle in adobo, diced)
- 5 bell peppers (large, cut in half, I used a mix of green and red pepper)
- cilantro (for serving, if desired)
