- 1 lb. skinless chicken breasts (boneless, cut into bite-size pieces)
- 3/4 tsp. kosher salt (divided)
- 3/4 tsp. freshly ground black pepper (divided)
- 1 Tbsp. sauce (from canned chipotle chiles in adobo, plus additional to taste)
- 1 sweet potato (medium, peeled and cut into 1/2-inch cubes, about 10 ounces)
- 2 whole chipotle peppers (from canned chipotle peppers in adobo, diced, I used 2, and the recipe had a pretty good kick—use less if more sensitive to spice)
- 15 oz. chickpeas (low-sodium, rinsed and drained)
- 1 pt. cherry tomatoes (halved)
- 3 green onions (medium, chopped, about 1/2 cup)
- 2 Tbsp. lime juice (about 1/2 lime)
- 2 Tbsp. chopped fresh cilantro (optional)
