  • 2 tablespoons rendered bacon fat (from 4 pieces of bacon)
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons cornstarch
  • 1/2 cup cornstarch
  • 1/2 cup tapioca flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons peanut oil (plus more for frying)
  • 12 red chiles (dried Chinese or other hot)
  • 1 piece peeled fresh ginger (thinly sliced)
