- 1/2 cup scallion (minced, white and green parts)

- 1 Tbsp. Shaoxing rice wine
- 1/2 Tbsp. sesame oil
- 2 tsp. sugar
- 1 tsp. salt
- 1 tsp. ginger (finely grated)
- 1/4 tsp. ground white pepper
- 2 cups all purpose flour (packed)
- 1 cup boiling water
- 1 Tbsp. sesame oil

- 1/4 cup red vinegar (or Chinese black vinegar)
