- 1 Tbsp. toasted sesame oil
- 1/4 cup neutral oil (grapeseed or other)
- 5 tsp. sesame seeds
- 1 1/4 tsp. red pepper flakes
- 12 scallions (white and green parts thinly sliced on the bias, reserved separately)
- 1 cabbage (small, finely sliced, optional)
- 2 large carrots (grated using the shredder attachment of a food processor, optional)
- 12 oz. dried udon noodles (lo mein or spaghetti)
