- 8 oz. firm tofu (drained and sliced in 1/4-inch strips)
- 4 Tbsp. chinese black vinegar (aka Chinkiang vinegar)
- 1 Tbsp. chili sauce (such as sambal oelek)
- 3 Tbsp. soy sauce
- 2 tsp. brown sugar
- 2 Tbsp. cornstarch (mixed into 2 tablespoons water)
- 2 eggs (lightly beaten)
- 1 tsp. ground white pepper
- 2 tsp. sesame oil
- 2 tsp. chili oil
- 4 green onions (sliced)
- 4 cups chicken broth (or chicken stock or vegetable broth)
- 2 inches ginger (sliced thinly)
- 4 green onions (cut into 2 inch slices)
- 2 cloves garlic (peeled and smashed)
- 1/4 cup ham (or raw smoked bacon, coarsely chopped, omit for vegetarian)
