- 1 bunch scallions (well-chopped, use as much of the green part that's edible)

- 2 Tbsp. salt
- 2 1/2 Tbsp. cornstarch

- 1 1/2 Tbsp. roasted sesame oil
- 6 water chestnuts (fresh, peeled and finely chopped)
- 2 Tbsp. fresh ginger (finely-minced, peel before chopping)
