- 60 mL pure maple syrup
- 1 tsp. lemon rind

- 1 Tbsp. neutral oil (Rice bran, canola, sunflower)

- 750 mL chicken stock (low FODMAP)

- 70 grams leek (green tips, roughly chopped)
- 240 grams japanese pumpkin (or spaghetti squash, deseeded, peeled & diced Or use parsnip/sweet potato)
- 240 grams large carrots (or 2, peeled & diced)
- 180 grams green beans (cut into pieces)
- 3 Tbsp. fresh coriander (cilantro to serve, optional)
