- 3 chicken breasts (bone in, preferably organic roasted and shredded)
- 1/2 red cabbage
- 1/2 green cabbage
- 2 bunches romaine lettuce hearts
- 6 scallions
- 3 carrots
- 8 mandarins (fresh satsuma)
- 1/4 cup extra virgin olive oil
- 1/4 cup champagne vinegar (I used O gluten free brand, or apple cider vinegar)
- 3 Tbsp. sesame oil
- 3 Tbsp. white sesame seeds
- 1 1/2 Tbsp. black sesame seeds
- 1 1/2 Tbsp. xylitol (I use Epic Dental brand)
- 1 Tbsp. kosher salt
- 1 tsp. crushed black pepper
- 1 mandarin (cut crosswise then squeeze into jar over a strainer)

I modified according to ingredients I had on hand. Added cashews. Didn’t have oranges. Cut dressing in half - Used fresh key lime juice in dressing and added flax oil and apple cider vinegar to dressing as an extender. I would make this again.
