- 4 Tbsp. gluten free soy sauce (divided)
- 1 1/2 Tbsp. olive oil
- 3 scallions (cut into 2 inch lengths)
- 5 slices ginger (the size of quarters, peeled)
- 1 cup chestnuts (fresh, or defrosted frozen ones)
- 8 shitake mushrooms (rehydrated in water, reserve soaking liquid, stems removed, halved)
- 1/4 cup dry sherry
- 2 Tbsp. honey
- 1 star anise
- 1 cup soaking liquid (shitake mushroom)
