- 1 block silken tofu (drain by wrapping in a paper towel and putting it between to heavy plates for 5 min or so)
- 3 cloves garlic
- 1 piece ginger
- 6 stalks cilantro (ONLY leaves, no stems, finely diced)
- 1 Tbsp. coconut milk
- 1 tsp. hoisin sauce (or any Asian sauce you prefer)
- salt
- 7 cups water
- 2 lemon grass (4 inch sections of, stalk)
- 3 kaffir lime leaves (/also known as Thai green curry leaves)
- 2 red chili peppers (small)
- salt
- 3 baby bok choy (with leaves)
- 3 carrots (medium)
- 5 mushrooms
- 1 cup bean sprouts
- 2 Tbsp. hoisin sauce (or any Asian sauce you prefer)
