- 1 shallot (rough chopped)
- 1 cup parsley leaves (be sure to remove most of the stems and rinse well)
- 1/2 cup cilantro leaves (fresh)
- 2 Tbsp. fresh oregano leaves (must be fresh!)
- 1 cup fresh basil leaves
- 1/2 cup olive oil (plus more for thinning if needed)
- 1/2 lime (large, or 1 small)
- 1 Tbsp. sherry vinegar
- 1/2 tsp. red chili flakes
- cracked pepper (fresh, to taste)

Well wow and can I have some new taste-buds please… my taste buds are still on holiday in Argentina! Super, super and superb too! Loving the fresh flavours, magical colours and the aromas of this Sauce. Delicious! When blending the ingredients of a recipe in a processor, I always and love; smelling the emerging result through the ‘access hole’ of the feeder-chute on the processor to check the outcome, but mainly for inspiration. This recipe’s blend of garlic, cilantro, parsley and basil mixed with the lime and sherry vinegar was stupendous.
