  • 2 cups Italian parsley (packed Flat, minced)
  • 4 tablespoons fresh oregano (minced)
  • 1 cup olive oil (Extra Virginia)
  • 5 cloves garlic (coarsely minced)
  • 5 tablespoons plum vinegar (or white vinegar, or red wine vinegar)
  • 1 serrano chili (whole)
  • 1 tablespoon kosher salt (add as needed per taste)
  • freshly ground pepper
  • 5 chili peppers

    1. Preheat the oven to 450 degrees F.
    2. On an aluminum foil sheet, place the Serrano chili and cook in oven until blackened
    3. Remove the stem of the Serrano chili and cut chili into smaller pieces
    4. In a food processor or blender, combine all the ingredients and blend well. Pulse at first to get a good grind.
    5. Store in a container or jar and let the ingredients infuse flavor for at least 2 hours. The Chimichurri sauce can keep in the fridge for 1 week.
