- 1 bunch fresh flat leaf parsley (large lower stems removed)
- 1/2 bunch fresh cilantro (large lower stems removed, omit if desired)
- 3 Tbsp. fresh oregano leaves (or 1.5 tbsp dried)
- 10 cloves garlic
- 2 tsp. salt (unrefined)
- 1/4 cup extra virgin olive oil (this one is my favorite)
- 1/4 cup red wine vinegar (or coconut vinegar)
- 1 lime
- 1 tsp. red pepper flakes (optional; omit for AIP)
- 6 bone-in, skin-on chicken thighs
- 2 sweet potatoes (medium, or potatoes, peeled and cubed to 1", sub low carb veggies for keto, turnips/radishes/etc.)
- 1 small onion (coarsely diced)
- 2 Tbsp. extra virgin olive oil (to coat vegetables)
