- 1/2 cup carrots (I used organic mini carrots)
- 1 lb. butternut squash (prepared, uncooked)
- 1 red bell pepper (use half if large or entire if small, seeded and chopped)
- 4 garlic cloves (peeled and minced)
- 14.5 oz. tomato sauce (fire-roasted, or regular tomato sauce)
- 4 oz. green chili peppers (can of diced, NOTE: use 2 tbsp. in the recipe, reserve the rest for garnishing, optional)
- 1 cup organic chicken broth (or vegetarian broth)
- 1 1/2 lb. lean ground beef (or omit if making this vegetarian)
- 14.5 oz. black beans
- 1 Tbsp. dried oregano
- 1 tsp. paprika
- 1 tsp. cumin
- 3 tsp. chile powder
- salt
- pepper
- 1/2 tsp. celery salt
- sour cream
- diced green chilies
- flat leaf parsley (Chopped)
