- 1 lb. ground turkey
- 1 cup chopped onion
- 2 tsp. ground cumin
- 2 tsp. dried oregano
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 16 oz. fat-free refried beans (I used vegetarian style)
- 8 oz. green chile (whole, ’s, drained and cut length wise in quarters)
- 2 cups colby jack cheese (shredded, divided.)
- 2 cups corn (frozen, thawed)
- 1/2 cup all purpose flour
- 1/2 tsp. salt
- 1/2 tsp. hot sauce (I used Tapitio, my personal fave)
- 3 large eggs
- 1 1/3 cups milk
- red onion (Chopped, optional but really adds a nice crunch)
- cilantro sprigs (for presentation)
