  • 3 tablespoons red chile powder (pure)
  • 1 tablespoon chile powder (ancho)
  • 1/2 teaspoon oregano (dried Mexican)
  • 1 teaspoon cumin
  • 4 cups broth (that you cooked the beans in, or you can sub chicken or beef broth)
  • 1 1/2 cups beef broth (preferably homemade or low sodium, if canned)
  • 1 avocado (ripe, for garnish)
  • 6 cherry tomatoes (for garnish)
  • 1/2 cup sharp cheddar cheese (grated, or Queso Fresco cheese, for garnish)
  • 1/2 cup fat (sour cream, low, is fine)
  • 3 1/2 corn chips (big pieces or large cut, sturdy)
  • 1/4 cup pickled jalapenos (finely chopped)
  • pesto (Pumpkin Seed Cilantro, recipe below)
  • 1 1/2 cups cilantro leaves (washed and dried, and stems, roughly chopped)
  • 2 cloves garlic (roughly chopped)
  • 2/3 cup pumpkin seeds (roasted, unsalted)
  • 5/8 cup extra virgin olive oil (fruity)
  • 2 teaspoons lime zest
  • salt (to taste)
