  • 1 can red enchilada sauce (mild, at least 19 oz.)
  • 2 beef bouillon cubes
  • 1/2 can refried beans
  • 7 burrito size flour tortillas
  • 1 cup shredded cheddar cheese (or so of)
  • 2 cups cooked chicken (chopped)
  • white rice (or 4 c. cooked brown)
  • 1 cup corn
  • 15 ounces black beans (rinsed and drained)
  • 4 ounces diced green chiles
  • 1 cup sour cream (or Greek yogurt)
  • 1/2 cup salsa
  • 1 cup cheese (cheddar, pepper jack, etc., plus extra for the topping)
  • 6 tablespoons honey
  • 5 tablespoons lime juice (2 small limes)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 pound chicken (cooked and shredded, I cooked 3 chicken breasts in my crockpot this morning)
  • 10 flour tortillas
  • 1 pound monterey jack cheese (shredded)
  • 16 ounces green enchilada sauce
  • 1 cup heavy cream
