A little time consuming to have to check the eggs every couple of minutes until they're done, but otherwise pretty simple and tasty. Next time, I’m just frying the eggs and putting them on top after the casserole is done baking. I added some salt, pepper, cumin, and ancho chile powder to the beans on each layer for more flavor.
