- 1 cup dried chickpeas (soaked overnight, or if you forget, just pour some boiling water over them and let sit for an hour)
- 1 bay leaf
- 2 tsp. extra virgin olive oil (Spanish)
- 3 garlic cloves (smashed)
- 2 Tbsp. extra virgin olive oil (Spanish, separate from above)
- 8 oz. Spanish chorizo sausage (sliced in half lengthwise and then sliced into half moons)
- 1 large onion (finely chopped)
- 1 carrot (finely chopped)
- 4 garlic cloves (minced and split in half, separate from above)
- 2 tomatoes (large ripe, I used 8 frozen roma sized tomatoes, chopped)
- 1 tsp. smoked Spanish paprika
- 3 Tbsp. fresh flat leaf parsley (finely chopped)
- coarse salt (kosher or sea salt)
