- 3 Tbsp. vegetable oil
- 1 medium onion (grated on the large holes of a box grater)
- 3 cloves garlic (grated on a microplane grater)
- 1 Tbsp. ginger (grated on a microplane grater)
- 5 Thai bird chilies (small green, or other green chilies, if you prefer)
- 1 red pepper (small, finely diced)
- 8 stems cilantro (leaves roughly chopped, tender stems finely minced and reserved separately)
- 1 tsp. ground turmeric
- 1/2 tsp. ground coriander
- 1/4 tsp. ground cumin
- 1 tsp. paprika
- 2 plum tomatoes (small, peeled, seeded, and roughly chopped, a canned tomato is fine)
- 15 oz. chickpeas (with their liquid)
- 8 oz. spinach (curly, roughly chopped)
- 2 Tbsp. juice
- 2 limes
- 2 cups cilantro leaves (picked fresh, and tender stems)
- 1 clove garlic
- 1 Thai bird chili (small green)

Very delicious. Lots of flavor, the opposite of bland. The chutney was especially good. I used Chile Serrano and poblano. I was only missing the ginger, I used ground ginger.

As it is this recipe is super bland-it will take some tweaking to make this more palatable

This is one of the best dishes I have ever made! DELICIOUS!! I didn't have any chilies so I used a teaspoon of chili flakes. I didn't have any fresh spinach so used frozen and I didn't make the chutney, I cant imagine how yummy it would be having all the ingredients. Definitely try this one!
