This is a very nice and quick meal to put together. Herbs offer a different touch to the chickpeas (vs using cumin, curry and such) so adds a nice variation in the mix. Had it with some brown rice

Flavors are awesome, I went a little heavy on the oregano parsley and basil and I used an emulsion blender in stead of mashing at the end.

Love! This was delicious! The only changes I made was used 1/2 c of red bell pepper and made with Jasmine rice rather than brown (my hubby hates brown).

I like the concept of this recipe! I changed a few things to suit my allergies and tastes. It works up nicely in an InstantPot if you want to cook up beans. I used a pound of beans and two large red peppers, and added pasta. Next time, I'll definitely add the carrot and tomato.

Easy, cheap, and tasty. I added 4x tomato paste and simmered with the lid off for ~5 minutes to make it less watery. Tip for meal prep: plan ahead to store the rice and chickpeas in separate containers or the rice will become soggy.

I made it without the carrots and it was great. definately will add it to my go-to recepies

This is definitely one of my new favorite soups now. It's really easy to make and tastes amazing!

I won’t make this again because the flavors were nothing special. It wasn’t clear if you were supposed to keep the pot covered while you were simmering. I covered it, but left about an inch uncovered. I simmered it for 25-30 minutes, but the chickpeas (I used canned) tasted too firm for my liking. I added cilantro at the end which made it taste better.

This dish is really good. It has become a staple in my home. It is easy to make and stores well for leftovers.

Great! I added way more tomato paste than called for though because it was too watery if I didn't.

Awesome! Very flavourful and healthy dish. I used coconut oil to sautée the onions and used more tomato paste (about 3x) than the recipe called for - turned out great! If you are going low-carb you can boil the liquid down and skip the rice, but it tasted amazing with brown rice.

it was delicious but instead of using 2 cans of chickpeas I used 3 and added abt 1/4 cup more water. also added a bit more oregano and black pepper freshly ground. delicious served with couscous & quinoa also. yummm

This was kid-approved, which is very difficult in this household. The only thing that keeps it from being 5 stars is that I had to add more tomato paste and salt to it than called for in the recipe. It was bland without the additions. But after, it was delicious! I'll definitely be making this again.
