- 1 kg boneless chicken thighs (chopped into bite-sized pieces)
- 1 red onion (finely chopped)
- 1 carrot (peeled and chopped)
- 2 celery sticks (finely chopped)
- 3 garlic cloves (thinly sliced)
- 1 bay leaf
- 2 sprigs fresh thyme
- 250 grams mushrooms (halved)
- 1 Tbsp. flour
- 12 oz. chopped tomatoes (can, 1 x 400g approx)
- 1 cup chicken stock
- 1/2 cup cream
- salt
- pepper (to taste)
- fresh parsley (for garnish, optional)
- 8 large potatoes
- 1 head garlic
- 2 Tbsp. butter (adjust amounts to your own preference)
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk (full cream whole)
