- flour (for coating)
- 3 bell peppers (1 each red, yellow and green, sliced)
- 2 onions (medium, chopped)
- 4 cloves garlic (crushed)
- 8 peppadews (drained and sliced thinly, or substitute 2 fresh hot chillies)
- 250 grams chorizo (sliced)
- 4 waxy potatoes (large, chopped, optional)
- 410 grams chopped tomatoes (tins of)
- 250 grams mushrooms (sliced, I used chestnut mushrooms)
- 2 Tbsp. smoked paprika
- 2 Tbsp. dried thyme leaves
- 4 bay leaves
