- 2 yellow squash
- 1 lemon zested (and juiced)
- 3 Tbsp. olive oil
- 2 tsp. turmeric
- 5 cups chicken stock (you can use vegetable stock, but the chicken stock adds a certain 'butteriness')
- 4 oz. basmati rice
- 1 chicken breast (poached, roasted, broiled or even leftovers, shredded)

- 2 Tbsp. fresh dill (chopped, garnish, optional)
