- 16 andouille sausage (sliced ounces, or other cooked smoked sausage)
- 1/2 cup chopped onion
- 1 green bell pepper (medium to large, chopped, I think red would taste good, too)
- 1/2 cup chopped celery
- 28 oz. tomatoes (canned pureed)
- 2 cups chicken stock
- 3 bay leaves
- 2 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. dried thyme
- 1 tsp. oregano
- 1 tsp. cayenne pepper
- 5 1/2 paprika
- 5 1/2 tsp. salt
- 1/2 tsp. pepper
- 12 oz. cooked shrimp (frozen, peeled, deveined, remove tails if you wish, I used medium)
- 2 cups quinoa (rinsed, or white rice)
- chopped parsley (optional:, for garnish)
