- 2 Tbsp. fresh lemon juice
- 10 oz. baby spinach
- spring greens
- 3 cups cooked chicken breast (chopped)
- 1 1/2 cups celery (thin sliced)
- 1/2 cup red onion (sliced thin)
- 1 1/2 cups dried cranberries (sweetened)
- 2 cups smoked gouda cheese (shredded)
- 1 1/2 cups salted cashews (or pecans)
- 1/4 cup mayonnaise (regular or light)
- 1/4 cup olive oil
- 1/3 cup cider vinegar
- 1/4 cup green onions (chopped, or scallions)
- 1 tsp. Dijon mustard
- 4 Tbsp. honey
- 1/2 tsp. ground red pepper (optional)
- 1 teaspoon coarse ground pepper (coarse)
- 1/2 tsp. coarse sea salt
