- 1/2 green bell pepper (diced finely, I did this in the food processor)
- 1 onion (medium, diced finely, I did this in the food processor)
- 3 cloves garlic (grated)
- 1 tsp. cumin powder
- 1 tsp. poultry seasoning
- 1 tsp. dried oregano
- red chili flakes (to taste)
- salt
- pepper
- 4 cups chicken stock
- 1 cup milk
- 1 cup water (if needed)
- 2 cups shredded mild cheddar cheese
- 15 oz. diced tomatoes (I used fire-roasted)
- 2 Tbsp. butter
- 4 Tbsp. flour
- 1 cup frozen corn kernels
- 15 oz. creamed corn
- chicken (bullion powder as needed)
