- 1 onion (large, sliced)
- 800 grams chicken thigh fillets (no bone or skin, chopped into 2cm chunks)
- 3 cloves garlic (grated or crushed)
- 3 cms ginger (grated)
- 2 tsp. cumin
- 1/2 tsp. canela
- 2 tsp. smoked paprika
- 2 tsp. turmeric
- 1 tsp. chilli flakes (or to taste – add more if you like things hot!)
- 400 grams chopped tomatoes
- 200 mL water (i.e. half the tomato can)
- 12 dried apricots
- salt
- pepper
- 1 lemon
- 2 Tbsp. fresh coriander (plus extra for garnish)
- 2 Tbsp. flaked almonds
